Super Bowl Spread
I have always been a football lover; part of the magic around the Super Bowl is time to connect with family, friends, place some friendly bets and share some awesome food.
If you have a specific diet, it can be tough going to a party and being tempted by all of the food you would normally not eat. I have come up with a list of game day favorites so that you don’t have to feel deprived and you can contribute to the spread in a delicious guilt-free way. These ideas are sure to please everyone while accommodating those with special dietary restrictions;
Burger Bar (lettuce wrapped for those who are gf)
Bacon Wrapped Dates
Pulled Pork
Chili/Soup
Baked Potato/Sweet Potato Bar
Burrito Bowl/Taco or Nacho Bar
Fruit Tray/Fruit Skewers
Guacamole (organic corn chips or plantain chips)
Veggie Tray with Dip (hummus, guacamole, your favorite salad dressing)
Salsa (pico, mango salsa, tomatillo salsa)

Two of my favorite game day recipes come from Giada De Laurentiis, who doesn’t love her? I have modified these two recipes to accommodate a gluten free/dairy free lifestyle. The stuffed mushrooms can easily be made vegetarian if you don’t like crab.
Balsamic Chicken Drumettes
Ingredients
1/2 cup Balsamic Vinegar
1/2 cup Honey
1/2 cup Coconut Sugar
1/4 cup Tamari or Coconut Aminos
5 Sprigs of Rosemary
5 Garlic Cloves, halved
10 to 12 Chicken Drumsticks
2 tablespoons Toasted Sesame Seeds
1/4 cup Chopped Fresh Flat-Leaf Parsley
Directions
Combine the balsamic, honey, coconut sugar, tamari or coconut aminos, rosemary sprigs, and garlic cloves, in a large, re-sealable plastic bag. Shake and squeeze the contents of the bag to dissolve the honey and the coconut sugar. Add the chicken drumsticks to the bag and seal with as little air as possible in the bag. Place in the refrigerator and marinate for 2 hours.
Preheat the oven to 450 degrees F.
Place the chicken drumsticks on a foil-lined baking sheet. Bake until the skin is caramelized and very dark in spots, about 30 to 35 minutes.
Meanwhile, place the marinade in a small saucepan. Bring the marinade to a boil (in order to kill bacteria). Reduce the heat to simmer and cook over low heat until thick, about 15 minutes. Reserve.
Use a pastry brush to brush some of the cooked/reduced marinade on the cooked chicken.
Place the chicken on a serving platter and sprinkle with the sesame seeds and the chopped parsley.

Crab Stuffed Mushrooms
Ingredients
½ cup dried bread crumbs (Simple Mills Crackers broken up or GF Panko)
½ pound lump crab meat
2 garlic cloves, peeled and minced
2 tablespoons chopped fresh Italian parsley leaves
1 tablespoon chopped fresh mint leaves
Salt and freshly ground black pepper to taste
1/3 cup extra-virgin olive oil
28 large (2 1/2-inch-diameter) white mushrooms, stemmed
½ cup of Pecorino Romano or Parmesan if you are adding dairy
Directions
Preheat the oven to 400 degrees F.
Stir the bread crumbs, crab, garlic, parsley, mint, salt and pepper to taste, Pecorino Romano (if adding) and 2 tablespoons olive oil in a medium bowl to blend.
Drizzle a heavy large baking sheet with about 1 tablespoon olive oil, to coat. Spoon the filling into the mushroom cavities and arrange on the baking sheet, cavity side up. Drizzle remaining oil over the filling in each mushroom.
Bake until the mushrooms are tender and the filling is heated through and golden on top, about 25 minutes.
