Turkey Burgers
The weather is getting warmer and that means grilling and alfresco dining, two of my favorite things. Years ago a co-worker of mine shared this recipe for turkey burgers and I have been making them ever since. They are a great alternative to your typical beef burger, full of flavor and sure to please any crowd. Setting up a burger bar would be an easy way to allow your guests to build their own customized burger, perfect for those with dietary restrictions as well.
Turkey Burgers
Ingredients
- 1 1/4 pounds ground turkey
- 1 large portobello mushroom cap
- 1 tablespoon coarsely chopped shallot
- 1 garlic clove minced
- 3 tablespoons lightly packed fresh parsley
- 2 tablespoons extra-virgin olive oil, plus more for brushing
- 1 teaspoon Worcestershire sauce
- Sea salt and freshly ground pepper to taste (I start with 1 teaspoon salt and ½ teaspoon pepper)
Directions
Use a spoon to scrape out the black gills from the underside of the mushroom cap. Cut the cap into 1-inch pieces and transfer to a food processor. Add the shallot, garlic and parsley and pulse until chopped.
Transfer the mushroom mixture to a large bowl. Add the turkey, olive oil, Worcestershire sauce, sea salt and pepper to taste; gently mix with your hands until just combined.
Divide into 4 balls then lightly press into 4-inch-wide, 1-inch-thick patties. Put on a large plate, cover and refrigerate until firm, about 30 minutes.
Preheat a grill to medium. Brush the grates with olive oil. Grill the patties, about 6-8 minutes per side or until cooked through. If you would like to add cheese, top each patty during the last 3 minutes of cooking and cover with a disposable aluminum pan to melt.
Toast your favorite bun or prepare a lettuce wrap if you choose, add your favorite toppings and condiments; lettuce, tomato, avocado, pickles, onion, mayo, mustard, ketchup, BBQ sauce etc.
